Capellini Pomodoro

One day for a welcoming lunch at work we walked across the street to Palamino's and all I could eat off the menu was the Capellini Pomodoro - without the cheese. This is a dish that is so simple, yet tastes like it is full of flavor.

Ingredients:
  • 4-5 cloves garlic, minced (we really like garlic)
  • 3 cans of diced tomatoes (14.5 ounces each)
  • ground black pepper and salt to taste
  • 2 cups fresh chopped basil leaves
  • 1/3 cup extra virgin olive oil
  • 12 ounces dry angel hair pasta, cooked

Directions:

  • Cook pasta "al dente"
  • Saute Garlic in all the oil in pan until tender
  • Add all tomatoes, salt and pepper and stir 2-3 minutes
  • Turn off burner and stir in chopped basil and pasta to the tomato mixture

Man, I bet those "cans" really work the jaw. What a contrast of textures!

So, really, do you mean "cans" of tomatoes?? I'm dying to know!!
