Black Bean Cakes with Cilantro Lime Sauce

I have made this version without the cilantro for non-cilantro lovers as well - they loved it just as much. Although, if you do love cilantro use it for sure!


Ingredients for Black Bean Cakes:
2 tablespoons olive oil
1/2 cup finely chopped onion
1/2 cup finely chopped green bell pepper
2 large garlic cloves, minced
1 2/3 cups cooked black beans
2/3 cup fine dry bread crumbs
1/3 cup fresh cilantro leaves, chopped fine
Kosher salt and freshly ground black pepper
Egg substitute for 2 eggs
1 cup yellow cornmeal
Vegetable oil, for frying

Directions:
1. Sauté onions, bell pepper and garlic in oil until onions are transparent
2. Smash ½ the beans and mix them with the sautéed onion mixture, rest of whole beans and all of the above ingredients (minus the cornmeal and oil)
3. Divide the mixture into balls and smash into patties then dip in cornmeal mixture to coat (be careful as they tend to fall apart during this process)
4. Fry the patties in oil until they have a crispy crust (or you can spray with oil and broil until crispy)
5. Top with Cilantro Lime Sauce and enjoy

Cilantro Lime Sauce:
· 1/3 cup vegetable oil
· 3/4 cup chopped fresh cilantro leaves
· 3 tablespoons soy sauce
· 1 clove garlic, minced
· 1 tablespoon fresh lime juice
· 1/2 jalapeno chili, minced
· Kosher salt and freshly ground black pepper
· Stir together cilantro, vegetable oil, soy sauce, garlic, lime juice, and chili. Season with salt and pepper.

I love to serve this with garlic mashed potatoes and roasted zucchini spears. Another favorite in my household!
